Is there any telling how soon WFN will have coconut

cream and coconut milk available again? If the

shipment is still being held-up at customs, that is

outragiously unfair!

According to one of the Internet Sites I was on the

other day, Capryllic, Lauric and Capric acids are all

effective in combatting Candida. So, because these

acids are in different ratios in coconut milk and

coconut oil, both are recommended treatments.

The coconut milk that WFN had is the ONLY product

without additives that I have been able to find.

Rowena recommended Jeeny's brand out of Austrailia. I

have contacted them to find out if it is available in

the U.S., but I am still waiting to hear anything

definitive.

Hi :

Good meeting you, I've never spoken to you before but have read many of your

e-mails. Our coconut cream and milk should be released any day, all we can

say is the FDA is a very slow slow moving bureatic office that does not care

how long it takes for a hard working family owned business to continue doing

business. We've had our cream and milk in our warehouse for months and have

been unable to get any help till we hired a Process Authority person to help

us with all the red tape.

Our 8 oz. of milk has 2 1/2 tbsp of coconut oil in one container and Our

coconut cream has 4 tbsp in one container.

So you can look forward to some delicious milk and cream as early as Monday

or Tuesday I've been told. I've never heard of Jeeney's brand, I hope it's

good.

The coconut cream is simply thicker, and not as sweet

as coconut milk. I love to make whipped coconut cream

(with stevia and vanilla). There is also another

product called " WFN coconut spread " and " TT coconut

cream concentrate " which are basically very thick

coconut spreads (nut butters similar to amond butter,

or peanut butter).

By the way, I just discovered yesterday that WFN is

selling off a (dated) supply of coconut spread at a

greatly reduced price (from $5.95 to $1.50 per jar).

This seems like the perfect opportunity to buy it and

try it, especially after 's choco-coco stir!

WFN also has organic raw cocao nibs and stevia powder

available. In fact, you can get all of the necessary

ingredients for her recipe in one site.

The difference between the two is that the milk is a combination of coconut

cream and coconut water. Coconut cream is pure cream fresh from the meat of

the coconut.

coconut milk go bad easily? Coconut water does not last too long, nor the

cream. There must be some preservative used to extend its shelf life. Coconut

oil on the other hand can last for years without going bad provided it is done

well.

Hi ,

Our coconut water has gone thorugh a flash cool process, which is a form of

pasteurization but much lighter. This gives the milk, cream and water a

longer shelf life, otherwise it would spoil.

The flash cool process involves these steps: It's heated to (158f) for 2

seconds, quickly cooled to (39.2f)(Refrigeration temperature). Its held

there for 30 min. quickly heated to (284f) and there for 4 seconds and

quickly cooled to (86f) and packaged at that temperature.

I might add there have been customers that have reported they found some

live enzymes in our coconut water, milk and cream, I don't know how they

tested it though. I personally love all three and use all of them when it is

available, we are all waiting here in the office for the FDA to release it.

This is what I know,

Coconut water (and sludge, for this matter) is the

main cause of the rancidity.

Once opening the fresh coconut, the things inside

(water, flesh) won't last long for milk or cream

making, unless it's directly cooled down within

seconds upon opening.

Preservatives are not necessary, should all the

reuired procedures are done directly upon opening the

fresh coconut. The key points are at the processing

and packaging.

Coconut oil, must be stripped of certain elements

(such as FFA) to last longer, and the appropriate

location for storage is also important. Commercially

speaking, a well-done CVO should last several years (2

- 4 years), the older it is, the stronger and taste

should be, naturally speaking.

Thanks Enoku for that interesting information. So I see that careful racking is

a big factor in getting the oil right, to pour the oil off the dregs, and have

been told by a different producer that my producer is really, really careful

with his product, which I know is racked repeatedly. My first " convert "

received her shipment of jars and is really delighted; I got half of her supply

to keep me going until I can do a big order on line. Now I have a jar of new

" good " stuff available for my second " convert " locally to continue her Kokonut

progress.

Thanks for your reply.

Suppliers will normally say that they are careful with

their products (as they should anyway). However, the

quality of the products, as well as the extent of the

processing goes more than that, namely, to the coconut

trees themselves, as coconuts grown in peat soil

condition and clay-like soil condition (and breeds)

will have different qualities - thus, require

different things.
