Doing some Googling I've just found these bits: The routine consumption of raw egg white may reduce biotin absorption enough to induce a deficiency. Cooking deactivates avidin and makes biotin from other sources available for absorption once again. Avidine in raw egg-white de-activates vitamin B8 (biotine). Ovomucoid in raw egg-white inhibits trypsin, an enzyme that decomposes absorbed nutrients. Note: The elderly and those with compromised immune systems should avoid consuming raw eggs. It is best not to over consume raw egg white as they contain a trypsin inhibitor which interferes with protein absorption and avidin which interferes with the absorption of biotin.
