Guest guest Posted July 19, 2007 Report Share Posted July 19, 2007 Hello All, I thought since we have a lot of new members, including myself, it might be time for a check-in, if we all want to: How long have you been using coconut oil? how do you use it? and how much do you use? and best of all - how has it changed your life? I have been using coconut oil only since June 1st, 1.5 months. 4 tbsp a day with food usually, 2 w breakfast/1 w lunch/1 w dinner (sometimes ive been making carob candy with it, but I watch my portions) The difference in my life is amazing! but the most amazing thing is in that time I am down for about 300 mcg of synthroid+cytomel to 75 mcg! I feel better than I have in years! Another thing is I have had infrequest herpes outbreaks, but i put some coconut oil right on the red pre-blister spot, and it was 100% GONE in 6 hours, and hasn't come back. When I switched to the virgin oil, however, I found that I developed a taste for it rather quickly. I now find that I can enjoy it straight by the TBS. Until you get to that point, however, some ways to use it that you might find palatable in the beginning is to use it on veggies instead of butter. It tastes great on green beans, lending a very subtle flavor, and I absolutely love it on Kale combined with 1 TBS apple cider vinegar. I cook the Kale with very little water for only a few minutes - just enough to wilt it but keep the green color. But experiment with your favorite veggies. Another yummy way to use VCO is to make grilled cheese sandwiches. I use low- carb bread for that. The bread will absorb 1-2 TBS of the oil and it tastes really great with the bread and cheese. Another way that the VCO tastes great is to drizzle it over popcorn. I use the single portion 100 cal. size so this makes a tasty treat. Good luck. I think if you incorporate it slowly you'll find that in no time your tastes will change. It's worth the effort and ordering the VCO online is easy to do and no more expensive than your local sources of the refined. After school gets out, we'll have a couple of weeks off before he starts his summer school community service class and then if all goes well will be going to the Art Institute of Seattle for their summer Art101 class, which is a week long introduction basically to what programs they offer to help determine if the kids want to go there. Weigh-in this week shows me at a maintain, which is gladly accepted because it means I lost anything I gained during my trip to CA this past week. I think I was up 2-2.5 lbs, so am happy to have it back off for this week's weigh-in instead of having to work a few weeks for that, you know? When I am on the truck, we eat practically the same foods for each meal for 5 weeks. After a year on the road we figured out what foods stored best and what we liked and what fit into our diet. It took a lot of trial and error the first ffew months out, but it finally settled into place. My calories are always higher on home time because we then have wine with dinner and I cook up some really missed meals like curry, or chicken tandoori, steak on the grill and salads.....oh how we both miss salads! I find that meal planning is essential to success. I sit with my diet program every morning and every evening for about 10 minutes, planning what I can eat and correcting any changes I made during the day. Then I check my average calories for the month to see if I am staying on target or getting too high. Apricot chicken sounds heavenly!    elisaannh -- check-in Yesterday I spent lots of time on meal plans. I picked up a couple of cookbooks with recipes for one or two. Big lesson was jazzing up simple dishes make the meals more interesting. I don't want to live on grilled chicken breasts and plain salads. Also don't want anything too complicated. For supper I added a tablespoon of Polaner apricot all-fruit spread the chicken and fresh herbs to my half-cup of rice. Very good and very easy.
