It doesn't matter how reputable the farm is, there is MUCH bacteria everywhere and the cows lie down and microbes can crawl in the teats. The teats and udder gets washed but what is INSIDE the Udder, comes out into the milk, that is why it is Pasteurized. It's then dead milk, so perhaps some would not want that. Unfortunately I'm in the middle of a city in Scotland and can't travel so I'd ideally like it delivered or find it available locally. I've tried the local farmer's market but they don't seem to be any dairy farmers there. All bacteria that is in the fresh milk is of a beneficial kind. There are no pathogens in fresh milk from healthy cows. In fact, there were studies done many times when fresh milk was inoculated with pathogen bacteria and left for 24 hours in room temperature. After 24 hours there was no sign of the pathogen. Nobody and no government body is looking out for you and your safety. Not one. The milk is pasteurized only to allow badly kept dairy cattle that stands up to their bellies in their own waste to collect that dirty milk and sell it and not to kill people in the process. I agree with you that THIS milk is NOT safe to drink raw. Cattle that is pastured is CLEAN. Pasture is clean. Nature is clean. Milk from cows that eat grass is clean. How do you think human race survived for several thousand years milking their cows and goats and camels and drinking their milk without cooking it? Think about it.
