Kefir, lemon juice, etc in the soaking water. Basic Oatmeal 1 cup rolled oats 1 cup warm water 2 Tablespoons fresh lemon juice, vinegar, yogurt, Kefir, or homemade whey 1 teaspoon sea salt 1 cup water Mix oats, warm water, and acid of choice, cover and leave at room temp overmight. To cook bring 1 cup water to boil, add salt and soaked oats, bring back to boil, reduce heat and simmer 1 to 2 minutes. (Instructions paraphrased). The reason for soaking: " All our recipes for wheat and oats are soaked overnight in warm acidulated water, a process that activates numerous enzymes that neutralize the many anti-nutrients and irritants in whole grains.
