2 (250 ml) boxes of coconut cream

2 1/2 tablespoons natural sugar (or 4 teaspoons natural sugar and a

dash or two of stevia)

Dash of salt

1 egg

1 tablespoon vanilla

Combine the coconut cream, sweetener, and salt in a saucepan. Cook

over medium heat, stirring occasionally until the mixture almost

boils. Reduce heat to low. In a bowl beat egg. Gradually stir about

1/2 cup of the coconut cream mixture into the beaten egg. Slowly stir

this off mixture into the remaining hot coconut mixture. Cook over

low heat, stirring constantly until slightly thickened, about 2-3

minutes. Stir in vanilla. Remove from heat and let cool. Use an ice

cream maker to cool and create a nice creamy ice cream.

If you do not own an ice cream maker, then pour this into a container

to freeze. Ice cube trays work very nicely. When the mixture is

almost totally solid (but not too hard) place it in a blender and

blend on high. If the cubes are too hard, it will not blend. If this

happens, just let it sit out for a few minutes until it begins to

melt. Once you have blended the almost frozen coconut mixture you may

return it to the freezer and freeze. This blending helps to create

fine ice crystals so you will have the texture of commercial ice cream.

Hi

Thanks, that's great, it sounds pretty easy. That is the only one of

Bruce's books i haven't got. I don't have an ice cream maker and was

worried about it going to hard in the freezer, so the freezing a bit

then blending is a good tip.

I net searched coconut milk ice cream and found many sites. You can use any

sweetner you want, I think, because the only chemical reaction is the liquid

changing to a solid.

Hi Deb and Amy,

Here are two recipes that I saved on my hard drive with the intention to try

them but haven't tried them yet. They both sound interesting and healthy. The

first makes 2 serving and the second makes 12. I would try the one with the

frozen bananas first as I use them to make delicious shakes with greek yogurt

and whey protein (I add a few frozen strawberries and blueberries too).

Banana Coconut Ice Cream

• 3 frozen bananas

• 1/4 cup shredded or flaked coconut (1 ounce)

• 1/4 cup dried unsweetened fruit (I use cherries or raisins)

• 1 teaspoon cinnamon

• 1 teaspoon organic chocolate powder (optional)

• 1 teaspoon + coconut cream concentrate

• 1/4 cup filtered water

Place all ingredients in a VERY STRONG blender and blend starting a low speed,

working up to the highest speed until all is mixed and is the consistency of ice

cream.

If needed, add a couple ice cubes to thicken and chill.

This makes a generous serving for two.

Swanson Coconut Pistachio Ice Cream

• 4 cups unsweetened coconut milk

• 1/2 cup sweetener

• 1/4 tsp. coconut extract (optional)

• 1 1/2 cups organic coconut shreds

• 1/4 cup organic pistachios, chopped

1. Combine coconut milk and sweetener, stirring to dissolve

2. Stir in pistachios, 1 cup f coconut shreds and extract

3. Chill in freezer, stirring occasionally until hardened or prepare in maker

4. Toast remaining 1/2 C. shreds. Top ice cream

Makes 12 servings of 1/2 C. size

Hi

I like Ice Cream and wouldn't mind trying it to .. Stevia would be a good

sweetener and I would likely add Milk cream to it .. On second thought....  time

to acquire an ice cream maker :)

You don't need a sweetener to make good ice cream. Its the cream that

counts. Same with Whey Fruit Smooties. In fact , I'll bet that Whey

would make the worlds best ice cream sans sweetener.
