I used to be an Industrial Radiation Safety Officer in a cement factory, what I recall of irradiation related to food is as a method to kill microbes and prolong shelf life of fresh food products. But why on coconut? The coconut is possibly vulnerable to irradiation because it may trigger hydrolysis of the fat and formation of hydroperoxides. Thanks for any clarification available.
