Hi,

Don't I wish I knew? I have a lovely piece of salmon which is

fermented and I don't know how long it will keep either. Of course

marinating is different than fermenting. Did you mean fermented? With

what ingredients did you ferment or marinate the fish?

We had to leave on a 10 day trip and here it is, about 13-14 days

later still in my fridge. It doesn't smell like anything. It looks

exactly like it did when I last looked at it 10 or so days ago (I

marinated it in lime juice and whey) Do you think it would still be

ok to eat? It has been covered all this time, but not air-tight.

Hi Sonja,

Sorry it took me so long to answer you. I had trouble finding an

answer. I finally wrote to Sally and she said it is hard to say how

long marinated fish will last, but three weeks would probably be

okay. Since your fish was is a closed refrigerator for 10 days it was

kept very cold during that time. Did you ever try it?

It has been two and a half weeks and we are still enjoying our

gravlox. I have let my nose be my guide. It fact we are having some

for lunch in a few minutes.

My mom ferments salmon regularly. She keeps it for a couple of day at

room temp covered with salt and a little sugar. Not airtight but covered

to prevent flies to get to it. Then she puts it to the fridge, and it

lasts there for months. And always delicious.

When I, once, brought fermented salmon to work to eat at lunch, I was

told (by SAD coworkers) that it smelled awful. They just don't know. It

was good.

Lacto-fermented milk smells not too good either, to many people, but

it's good, isn't it?

********Roman,

everyt lacto-fermented food i've tried so far smells *good* to me. when i

did my first batch of fermented oatmeal some months ago, i couldn't beleive

how good it smelled. now i've started making kefir every day and i LOVE the

smell. It's a very 'homey' smell. in fact, if there's such a thing as past

lives, i'm sure mine was spent grubbing down on lacto-fermented foods

because every time i eat them, it feels like coming home.

it sounds silly, but that's the best way i can describe my reaction to the

smell and taste of lacto-fermented foods ;)

Suze,

I like the smell and taste of lacto-fermented foods too. My point was

that not all people like the smell, and that doesn't mean that the food

is bad. I was just replying to a statement that bad fish smells awful,

and I understood it to imply that if the fish smells bad, it must be

bad.
