Of course marinating is different than fermenting. Did you mean fermented? With what ingredients did you ferment or marinate the fish? I finally wrote to Sally and she said it is hard to say how long marinated fish will last, but three weeks would probably be okay. Since your fish was is a closed refrigerator for 10 days it was kept very cold during that time. Did you ever try it? It has been two and a half weeks and we are still enjoying our gravlox. Guest guest Posted June 19, 2002 Report Share Posted June 19, 2002 My mom ferments salmon regularly. She keeps it for a couple of day at room temp covered with salt and a little sugar. Not airtight but covered to prevent flies to get to it. Then she puts it to the fridge, and it lasts there for months. And always delicious. They just don't know. It was good. Lacto-fermented milk smells not too good either, to many people, but it's good, isn't it? My point was that not all people like the smell, and that doesn't mean that the food is bad. I was just replying to a statement that bad fish smells awful, and I understood it to imply that if the fish smells bad, it must be bad.
