I'm trying the bread recipes for the first time. I soaked fresh

ground wheat berry last night in yogurt, but forgot the water. After

adding it this morning it is taking forever to knead. I'm adding

whole wheat flour. What causes this bread to rise? Is there anything

I should add to the recipe? What about adding sorghum??? THanks.

Are you using an NT recipe? Which one? Doesn't it call for a

leavening agent? Add water to knead to desired consistency.I think

they soak(NT) the flour too. Dennis

Yes, it's an NT recipe. I soaked the flour, but forgot the water.

After adding it the next day it took an extra cup of flour to get any

kind of thickness. Never got think enough to knead but I cooked it

anyway. The only leavening NT suggests is baking soda. It tastes

good; I had to cook it over an hour more.
