Welcome, . Let me point out that this is NOT a raw foods

list, but a list for discussing Nourishing Traditions and the

principles entailed therein. Yes, NT advocates a good proportion

of raw foods in the diet, but please don't be disuaded from

participating here just because most of your food is cooked.

Some of the members here that post most often eat primarily

raw, so it tends to seem as if that's the majority, but it's not

(nothing against the all-raw eaters here).

My opinion is that it's okay to cook with it, since it's a very stable

oil, being so saturated. I use it to cook things like eggs and I

bake with it sometimes. But I use it raw, too, mostly in a

smoothie with raw kefir, fruit, milk and honey (I warm the oil

enough that it's liquid and drizzle it in while the blender is going,

otherwise you end up with clumps of it, not appealing in my

book).

I don't know about this one. I keep a small jar on the counter and

the rest in the fridge, refilling the small jar every few weeks. I

haven't had any that seemed to change or go rancid, but if it

didn't noticably change the taste or smell of the oil I wouldn't

have any way of knowing if it was rancid. My nose is pretty

sensitive, and I haven't noticed any change. Maybe someone

has done lab testing to see if and at what point it starts to

change chemically, probably a question best asked on the

coconut-info list. Everything I've read about it says it's very stable.
