Guest guest Posted June 14, 2001 Report Share Posted June 14, 2001 Hi, I just wanted to share one of my most favorite recipes, as I have been asked for suggestions about recipes in the past. I eat lots and lots of salad, and this is the one I'll pick over most, just because I love garlic and lemon. This has all healthful ingredients, but you might want to go light on the parmesan cheese, to avoid the dairy. Caesar Salad 1/2 cup olive oil 2-3 cloves garlic 2 Tablespoons freshly squeezed lemon juice pinch of salt 4-5 anchovey fillets 1 head romaine lettuce, torn into bite size pieces Croutons freshly grated parmesan cheese Combine olive oil and garlic in a blender and blend until smooth and creamy. Add lemon juice and pinch of salt. Add anchovy fillets, and blend thoroughly. Pour dressing over romaine leaves and toss together until leaves are all coated and shiny.
