If you tolerate vinegar, the vinegar " must be unfiltered unpasteurized, etc. " like Bragg's or Eden's brands, and only using sea salt, not regular table salt. However, ensure you are taking the correct amount of ocean sea salt per day, which is 1.5 teaspoons, since that can cause you to crave acidic things like vinegar. Pickling foods is done with either salt brines or vinegar which aren't used to ferment cabbage. However, cabbage can be pickled with a salt brine or vinegar like any vegetables. The important thing about pickled foods is to ensure they use the right kind of vinegar, which must be unpasteurized and unfiltered apple cider vinegar like Bragg's or Eden's brand, and that they only contain sea salt and not regular table salt. I didn't realize that pickling and fermenting were different processes. And you were right about the organic pickles.... I checked the label on my organic pickles, and the vinegar used is " organic distilled, " and the salt is just " salt, " so I 'assume' it is not sea salt! I eat very few pickles anyway; I'll be more cautious of the ones I buy in the future! It's looking like making one's own pickles and even sauerkraut is the best way to go, and actually not that hard or time-consuming to do. It's the shredding of the cabbage that put me off; I may try a first batch of sauerkraut by buying the " pre-shredded " cabbage at the store.
