You are right about the cheese! You may not have candida. Did you take the questionnaire, which is on this page? http://www.healingnaturallybybee.com/articles/intro3.php The problems you have are mostly because of toxins being released, which isn't a bad thing due to the bad foods you were having. I'm still re-writing articles, but I realized candida is not the " cause " of so many symptoms, diseases, etc., and instead it is the " result " just like cancer is. So if you score okay on the questionnaire I think you'll do great eating The Optimal Diet. I modified the foods on The Optimal Diet because candida feeds off of all carbs (plant foods) which change into glucose in the body. Of course it is impractical to eliminate all carbs, so only the lowest in sugars are included on my program, i.e. 1/2 cup that equals 5 grams of carbs or less. You don't " have to " only eat organic meats and eggs. Since I wrote my article I realized it is more important you obtain the nutrients available in those foods, rather than become overly concerned about bad stuff. Your body is well-equipped to sort out the nutrients from the bad stuff which it gets rid of very quickly, particularly on a high-fat low-carb diet. There are too many merchants of fear warning us about all kinds of things, and I think we need to " pick our battles, " weighing the importance of this against that, and not get caught up in all of the unwarranted fears. Our worst enemy is fear itself! So let me know how you scored on the questionnaire, and we'll take it from there, if needed. Yes, I took this test, it gave me some moderate result I can't remember accurately now, so I just took it again, typing in the problems I had, when I started on the diet. I got a score of 100 points, 17 percent. I already thought about other issues where my symptoms could come from, but I couldn't think of anything other. What else could cause such strange symptoms as I had? Feeling dizzy, " not-being-oneself " and generally feeling like not being able to think (even when I'm not tired, which I am often, also). And it got really really worse after eating a load of carb-stuff (which also triggered a massive craving of even more carbs). My feeling is, that it gets better with time, but I also have the feeling, that I didn't find out what it is, that triggers those symptoms. Sometimes they seem to be more intensive and sometimes I think they are gone completely, but it varies, and i try to find out why. That's why I'm so interested in why you restrict some food I am basing my diet on (and hardly can go without, because otherwise my diet would get way too expensive). I understand, that you removed all of the food containing some carbs. But what is it about the no-carb-food, which also is on your No-No-list? In particular I'm asking because of the cheese, (roasted) Peanuts and the processed meats. It is for example nearly impossible to get sausages without " Pökelsalz " here (which contains salt and sodium nitrite, nitrate or potassium nitrate). I understand, that this stuff isn't good for my health, but is it really necessary to live completely without them in order to solve my problems? Or will it just make the period to getting healthy make longer? I am asking because I want to make sure to invest my money in food as efficient as possible to get healthy. I'm willing to spend much more than normal people are (even non-students), but my budget is limited. It is important for me, to get my brain to work perfect as soon as possible, because everything i don't get in my head now, I have to learn later to pass the exams. So I really want to weigh the importance of in what to invest, as you said. Either more meat or more organic, but with more cheese and stuff that is pasteurized. At the moment I'm trying to eat organic meat and MSC fish wherever possible but most of the time eat conventional eggs, cheese and cream (all with a lot of butter, cocoa oil or ghee, for sure). Last I want to say that I really agree with you in many many points. I really would like to just eat good beef, which had a nice life and also is more healthy and I certainly will do this when I earn some more money after I've finished studying. And I also totally agree with you concerning sustainability in environment and resources. Carbs are all plant foods, including grains, nuts, seeds, legumes, fruits, vegetables, spices, herbs, etc. In other words they are any foods not classified as protein or fat. +++I removed all of the foods that are unhealthy for anyone, along with high-carb foods and all dairy except for butter because of the lactose/sugars in them.
