are omelettes ok ?

i have just been reading a newsletter by Dr mercola, all about good cholesterol.

In it he says eggs are good but not in things like over cooked scrambled eggs,

as he says this can turn the fats rancid.

So if this was true could omelettes also do this to eggs.

I dont see it can be right though. What do you think Bee?

Of course, as Americans cut out nutritious animal fats from their diets, they

were left hungry. So they began eating more processed grains, more vegetable

oils, and more high-fructose corn syrup, all of which are nutritional disasters.

inflammation, and therefore cholesterol, in your body. So don " t let anyone scare

you away from saturated fat anymore.

Chronic inflammation is actually caused by a laundry list of items such as:

Eggs or meats should not be overcooked, anyway , because it makes them lose

moisture and packs the protein molecules closer together so they are harder to

digest.

The only way one needs to be concerned about rancidity, is if one cooks on high

temperatures with oils with low smoking points which will cause them to become

rancid .. i.e olive oil.

Better to use coconut oil, lard, duck fat or other fats with a high smoking

point to avoid issues of rancidity.
