You can leave it for 3 hours, 6 hours, all day or overnight, and the longer you

leave it the less gritty it will be, but over 12 hours makes it dry out too

much.

Also you can make more than one day at a time and keep it covered well in the

refrigerator. If it dries out add a little lemon juice, but be careful since

adding it adds to the volume so it will affect measuring it out.
