I recently found your site and it is helping me so much, so THANK YOU! I have a question about coconut kefir - I was making my own, by blending dried unsweetened coconut with water and straining it to make my own milk, then culturing it for 3 or 4 days with a good kefir starter powder, so it is very tart and not sweet by any means. I know that dairy kefir is not okay because of the sugars that are formed, but what about coconut milk kefir that I make myself? Are there sugars in this that would not be okay?
