Guest guest
Hi Ali, Fermentation was a way to preserve foods back before we had refrigerators. Some people automatically let it ferment for 6 weeks or longer because they like the stronger flavour. You could put it in the fridge to slow down the fermentation process. I think if you ate a little bit without problem, then it's fine. Hope that helps! It looks and tastes ok, as I would expect it to, although it's not my favorite food which may be why I haven't eaten it (I'm not a lover of vinegar or anything strong flavored). I made it about 6 weeks ago and it is sitting in a glass covered container on the worktop in my kitchen. I can't see any sign of degeneration or anything, but would it still be ok to eat? Would it still work? > > As my digestive issues have calmed down a lot I may not need it, but am reluctant to throw it away if it is still ok. I have had some of it, but I think part of my reluctance to eat it has also stemmed from being a bit suspicious of it, never having had any 'real' sauerkraut before! > > Had I been born in Germany and been brought up on it from the year dot I wouldn't bat an eyelid over it, but it is not something I have ever encountered before. > > Ali. >
