I slowly gained weight and my blood sugar would not drop below 100. Also, being a weight trainer, I could tell I was losing muscle tone and, it seemed, strength. So two weeks ago, I adjusted the ratios so that protein was higher than 60 (up to 100; *I had a typo in my sample day, above*) and dropped my fat intake to just 70% of calories. Doing this, it seems the weight is coming down as is blood sugar and my strength is going up... So THAT is my question: is 100grams of protein (for 5'6 " female) too much and the 120g fat too low to get the candida healing?

No, since whatever you are getting in good nutrients are still helping your body heal itself. If your protein is too high in ratio to the fats you'll know since you get constipated.
