Because there is little lactose, if any, left esp for aged cheese (from raw milk of course). Also acv is allowed and has good yeast so why not the cheese? Same for yogourt, it contains carbs ok but so do nuts, so why isnt it allowed? last question: what are your thoughts on amines and sallicylates? some people are very intolerant to those and feel much better when they avoid food that are high in these, like coconut, fruits, some veggies, some meat etc;. thank you have a nice day, Caroline. Whole foods act differently in the body than isolated substances in a laboratory.
