Here's the custard recipe post from our Recipes group:

And here's a copy of the post with the coconut bark recipe. I have it saved in

a handy dandy Recipes folder within my email program. I don't recall who posted

this originally, but I thank them very much.

" Then, for my " treat " variation, I take Nutiva, which is a sweeter/stronger

coconut flavor, and melt it with butter (optional) and juice of two lemons plus

stevia to taste.

Pour this in a pan only 1/8 " thick on the bottom, put it in the refrigerator or

freezer, then break it into little pieces like the 'bark' you can buy at the

holidays.

I put the broken up pieces in a container in the fridge, and we call them

" coconut cookies " for all the family to reach in whenever. We mostly enjoy it as

a dessert though. (Amazingly even my husband will eat it, who says the smell of

Nutiva makes him nauseous!)

Two variations I also make are:

" Peppermint Bark " (same as above but instead of lemon use peppermint oil and

stevia--caution peppermint oil is an anitfungal!), and

" Cinnamon Vanilla " (instead of lemon, use cinnamon mixed with vanilla extract

that does NOT Have alcohol, glycerin or corn syrup, and add stevia to taste). "

I like making vanilla flavored bark. :)
