I have a hard time with cooking, because I get so tired! I'm sure a lot of you can relate. I'll try to find some to share, or invent one...LOL.. ELEPHANT STEW 1 large elephant 2 rabbits Salt and pepper Take 1 large elephant and cut into bit size pieces. Salt and pepper to taste. Place in a large stew pot over outdoors fire. Simmer for 4 weeks, until tender. This will serve approximately 3,800 people. CHOCOLATE DELIGHT 1 c. nuts, chopped 1 stick butter (softened) 1 c. flour 1 (8-oz.) pkg. cream cheese 1 c. sugar l large Cool Whip 3 c. cold milk 1 pkg. instant chocolate pudding 1 pkg. instant vanilla pudding Mix nuts, butter, and flour and put into an oblong pan. Bake at 350' for 25 minutes. Cool. Mix cream cheese, sugar, and 1/2 of large Cool Whip. Spread on cooled crust. Mix milk and both puddings. Spread on top of other. Top with remaining Cool Whip. It's encouraging to see SIMPLE recipes that other people with my condition do make. I dont' see the problem with this. It get boring talking about negative dwarfism issues about aches and pains, and discrimination, etc. I think this IS dwarfism related. We are people with dwarfim, and we have to cook, and these are some things we cook to make life a little simpler. This is one thing that we have in common,and how many nasty things can you say about a recipe? ,besides you are a single gent,right?Why not copy these down and try them? Eventually all good things come to an end,so those of you that are tired of the recipes,just wait,and some good arguments will start soon. I tried mixing the oil into yogurt, for example, but it made it " crunchy " because it was cold and solidified! I've been making a smoothie with kefir and coconut water, that's delicious, but I realize I'm not getting as much of the benefits of the oil that way. Guest guest Posted May 5, 2005 Report Share Posted May 5, 2005 I didn't use to cook with oil too much either, now it's a luxury to cook with oil again and saute and add it to my soups etc with no weight gain! I would gain weight when I would cook with canola or safflower, olive, etc. If you blend it with smoothies, your smoothie can't be icy cold. I have no problem using coconut milk and adding a bit of oil to my smoothies and blending super well. But I never make icy smmoothies. I used it to make tacos. I coated each tortilla in VCO, filled the tortilla and then baked it in the oven until crisp. No one noticed that it was made with VCO. Ice cold things create a sharp contraction of the internal organs and slow down their power, or " fire " as it is known in Ayurveda. People have been known to have dramatic healing just from changing their habits of eating ice, ice cream, and cold foods. Raw food has a similar effect, although not as much. That's why, even though the initial impact of all-raw can be good, people often eventually get weak and depleted from it, especially in colder climates. Leading herbalist Tierra says that people who stay on all-raw long-term sometimes reach a point of no return in their bodies. Living in Boston, however, I don't know anybody who has stayed on all-raw that long. However it still contains gluten, so it probably won't be suitable for you. It was lovely, really nutty. It proves quicker so difficult to do in machine but used dough setting and then did it in normal oven. I've never used coconut flour, can't get it locally, will have to order it. I don't know if that will work in machine, but can't wait to try it anyway. I'm sure someone else will have a receipe when more people come on line. Guest guest Posted November 6, 2006 Report Share Posted November 6, 2006 BROWNIES ( receipe from V. Verallo book " Rx Coconuts " ) 1 cup butter 1/4 cup coconut flour 2 cups sugar 1/2 tbsp. Baking soda 6 eggs 1/2 teaspoon salt 2 teaspoons vanilla 1 cup cocoa 3/4 cup all-purpose flour 1 cup chopped nuts Cream butter then add sugar gradually. Add eggs one at a time mixing well after each addition.Mix in vanilla. In another bowl, mix together all-purpose flour, coconut flour, baking soda, salt and cocoa. Add this mixture to the creamed butter and mix until well blended. Add 1/8 cup of chopped nuts. Pour into greased pan. Smoothen surface with a rubber scraper and top with the remaining nuts. Mix together flour, coconut, baking powder, and salt and set aside. Blend coconut oil, eggs, sugar, and almond extract. Mix wet and dry ingredients together. Roll dough into 1 1/2 inch balls and place 2 inches apart on cookie sheet. Flatten ball to about 1/2 inch thickness. Bake for 12 to 15 minutes, until pale tan. Transfer to wire racks to cool. Anyway.I use VCO instead of butter and all oils.......I use it on my skin - you can put a lot on, it absorbs, leaves your skin feeling wonderful in about 10 min. I make a chocolate candy - melt dark chocolate (in micro), add lots of the VCO, add nuts or shredded coconut - cool and ENJOY!!!!! Quick, sinful and easy. I also make toast - one slice of italian/french bread will hold about two tablesspoons.........add peanut butter or splenda and cinnamon - it is fantastic. I love pouring it on my corn on the cob........the sweetness of the oil with the corn is very good.
