I think of cocoa butter when you say coconut butter. Thought this might help to clear it up. Dr. Kelley's Self-Test and Metabolic Types Chart will give you the answers, that you're seeking about why one person is better able to digest a Saturated or another Mono-Saturated or even another Poly-Unsaturated Fats and Oils and then be hardy and healthy consuming one over the other! They got a bad reputation simply because we do not produce it and it is not a commodity we trade. Unfortunately. There are a couple of books that I've found very helpful. One is Eat Fat, Lose Fat and the other Nurishing Traditions both cover these issues.
