I'm in the SE corner of Oklahoma in the USA where we use freezers all the time. Pecans freeze well and I would think walnuts would keep better that way also. How long they would keep, I don't know. Some seeds and nuts might keep better if you roast them and put them in a bag and vacuum seal it. I haven't tried it. If you'd like I think I can inquire on Friendly Freezer where there has been some discussion on vacuum sealing and find out. To maintain optimum freshness, shelled walnut kernels should be kept in refrigerated storage areas at 0-3.3 degrees C or 32-38 degrees F, and at 55-65% relative humidity. When the weather gets cooler and you are looking for something to do in the evening, shell them and package in zip freezer bags. And simply pop them into the freezer. I presume that you have English walnuts. If they are black walnuts, throw them in the driveway and after you have backed over them for a couple of days, the green husk should be broken away. Then you can precede as above. I am serious about the driveway. Many people I know here in ID do this every year. Otherwise they are a bear to shell. However, in my end of the world we all have dirt driveways. So I am not sure what the walnut stain may do to cement. The black walnut has a dark brown/black shell that really difficult to crack, I have to pound it with a hammer or something. If you get it to open in half, there's a pretty heart shape left in the shel after you take the walnut out. As far as magnesium in walnuts, man, this type of question drives me nuts!!! I just can't worry about it anymore. Just eat a well balanced meal, assume nature knows how to get your nutrients from whole foods. Sorry, don't mean to put you down at all. This removed the " husks " . You could remove them by hand but they badly stained your hands and you looked like a dufus at school or work for a week. We would pick through the mess and pick up the shells, wash them off, let them dry, and throw them into gunny sacks for storage and " aging " . In the dead of winter (pre-cable TV), we'd sit around and smash the shells with a hammer and pick out the meat. A huge bag full of shells would yield about 1 pound of meat. It really sucked but my dad was bigger than me. Needless to say, they are quite different from a bag of English walnuts that you can crack with your hands. I eat about 1 Tablespoon of walnuts either in my morning oatmeal or in my yogurt. Walnuts are good for the heart and they fulfill my desire for crunchy! They have never given me any problems. I can also eat peanuts, almonds, and cashews (my favorite) but WILL POWER keeps me from it (except at a weak moment). Slows down that weight loss for sure. I have 1 oz about three to four times a week. I've never had any trouble getting them down and I make sure I allow for the fat content in my daily allotment. I eat the plain unsalted type from Sam's Club, etc. Walnuts help to take away that gnawing hunger. Nina told me to stay away from the Almonds because of the fat in them, but they are a great way for me to get protein. Then I had another bandster say the same thing, "You can eat Almonds??!!??"
