Cooking is a creative outlet and stress reduction technique for me. I love to go to a restaurant, have something new and come home to try to re-create it. My friend, Sylvie, is a Russian immigrant and makes her cabbage soup like borsch, but without the beets. She thickens it with dehydrated potato flakes and it's delicious with pumpernickel or light rye bread. Sometimes, I stir up a batch without using either chicken or beef stock, using lots of other veggies to flavor the broth. I use very little salt, but love pepper. Other times, I use chicken stock, lots of onions and add carraway seeds. A friend at work has a recipe which includes almost every vegetable known in North America. I'll see if I can get a copy to share with everyone in our group.
