Beet juice is potent stuff. Jay, " the Juiceman " Kordich says to never

drink it solo---always dilute it with a milder juice, such as apple, carrot

or cucumber, and for half a small beet, to mix it with the juice of four

apples. Here is what he says:

" Pure beet juice--from the bulb or greens--may temporarily paralyze your

vocal chords, cause you to break out in hives, increase your heart rate, and

give you alternating chills and fever. "

On another list a woman wrote in and said that she had drunk a large glass

of beet juice because she heard how good it was for you, and she said it

made her feel awful--tossed her cookies big time, then a pounding headache

and general malaise.

However, she had the right idea. Beet juice IS good for you. Here's what

The Juiceman writes in his book the Power of Juicing about beets:

'It is no coincidence that ruby red beets are beneficial to the

blood.....Beets contain iron, calcium, sulfur, potassium, and chlorine.

They also are a source of beta carotene and Vit C. Their rich mineral

makeup contributes directly to the well being of the liver and gall bladder

while building up blood corpuscles and cells and stimulating the activity of

the lymph glands. Beets emulsify bile and flush the kidneys and bladder.

Beet greens are rich in cartenoids which help prevent certain types of

cancer. They also contain manganese, which combines with iron to feed the

liver and red corpuscles. This vital mineral contributes to normal brain

functions, reproductive functions, bone structure, and normal glucose

metabolism. "

Note, we are talking about raw beet juice here. I really like cooked beets,

and I can eat a whole plate full of them no problem. It is often used as a

way to measure bowel transit time...(try it, you'll see why!) The

difference is that cooked beets have no live enzymes in them--it is dead

food.
