They are full of chemicals (unless there are some good organic canned soups out there that I don't know about. If so, they are probably expensive.) Soup is SO easy to make. Get a large pot. Brown some good organic stew beef with onions, add vegetables of your choice, add tomatoes, add water or broth, season well and let it cook all day or until you can't stand waiting any more. Freeze in meal sized containers and you will be a happy camper for weeks. soup is one of my very favorite things and it is easy for me to eat it every day when the weather is cool, cold or down right nasty. As many of you know, I love well seasoned food. And soup gives me the opportunity to add good things like kale, collard greens, and kelp and most other beneficial vegetable to my diet all at one time. It is truly a God send for us. I forgot to get celery Celery is *not* a favored veggie around this house, so I usually skip it in all recipes that call for it. In a new recipe, when I'm not sure how it's going to taste right away, or in one that really needs it, I keep a jar of dehydrated celery flakes and add a spoonful of that. Our beloved Vita-Mix Tortilla Soup uses raw vegetables but it has been my experience that you really need to somehow cook onion for use in these recipes as its flavor tends to predominate and it's not pleasant. As Kandy knows, I make a foil packet and roast all of my veggies except the tomato for that particular recipe and it really does make for a better-tasting result because the sugars in the veggies caramelize (at least somewhat--I don't roast them forever). I tend to save raw for smoothies and juice but that's just me.
