I had it for lunch the other day and it smelled so good my picky children even ate it. Creamy Broccoli Soup 1/2 bag frozen broccoli (or fresh) 1/2 bag frozen cauliflower (or fresh) 1 leek, thinly sliced 2 cloves garlic, crushed or minced (can add at the last if you prefer) 1 rib of celery, diced 1-2 quarts of bone broth (I used turkey bone broth) 1/2 t. thyme 1 sprig of rosemary, destemmed and finely chopped salt and pepper to taste Saute the leek, celery, and garlic in coconut oil in a heavy bottomed pan. Add bone broth, seasonings and veggies. Bring to a boil and then turn to low and simmer for 20 minutes or so. Then I put about 2-3 cups of soup in a blender and blend it until smooth. Add this back to the pot and you will have a creamy veggie soup. You could blend it all if you prefer a smooth texture. Even though it looked like baby food peas, my kids still ate it and asked for seconds. The bone broth really adds a lot of flavor. Quote Link to comment Share on other sites More sharing options...
