The key is to make the best choices you can. A higher-end restaurant is likely to serve better quality food that hasn't been microwaved than a lower-end restaurant. You can always tell a little fib and tell the waiter that you have 'food allergies' and ask that your food is prepared in butter only. Servers are often more accommodating when they hear a person has 'allergies.' Bring along your own sea salt in a small container. For drinks, you can usually ask for lemon in your water. You can also ask for extra butter or olive oil on the side. My husband travels a lot for work and these are a few of the tricks he uses.
