+++Hi Marisa. Yes, unpasteurized means it has not been heated in any

way, which means it is totally raw. It should also be eaten cold, and

unheated.

**** It's not so much " raw " because fermenting the food pre-digests it through

the process

of fermentation. However, unpasteurized has not been heated at high

temperatures so the

enzymes, etc. are more available.
