Sour taste of coconut meat indicates that it is already undergoing fermentation

and decomposition. The sour taste comes from organic acids produced particularly

acetic acid. If it is only a little sour, I think it is still okay if it is

still within its specified shelf life.

Coconut has sugar in it, so it isn't on the diet initially. On

theother hand the fat from the coconut (which doesn't have sugar) is a

powerful antifungal against Candida.
