Guest guest Posted July 27, 2006 Report Share Posted July 27, 2006 I just want to share this with you. It is my own creation, and is very cooling on a hot afternoon, and very satisfying. It takes a lot of chewing, and takes time to eat, so it is good for me in that respect, as I tend to overeat. It uses raw beets and carrots. I know that some think that any " sweet " vegetable is not good for us, but I have found this not to be true. Of course, what works for me, may not work for you, but I hope it does... Carrot, Beet and Zucchini Salad (for one - double for more servings) Grate: One-half large carrot, peeled One-half medium (about 5-6 " ) zucchini squash One-half of a tennis ball-sized beet, peeled Chopped celery is a good addition - about one-half of stalk I sometimes add a few cut-up chunks of pineapple - the kind in its own juice To this add: The juice of one-half lemon (Invest in a reamer - what a great utensil!) 2-3 tbs olive oil !/4 tsp sea salt If you want a little more sweetness, you can add 1tbs of Xylitol. Xylitol will not aggravate candida Adjust the lemon and oil to your taste I make up about a cup each of the shredded vegetables at a time, put them in separate containers in the fridge, so when I am ready I can put this salad together in a minute. One-third cup of each makes a whole cup of salad. You can add other things to make variety - some cooked beans, or chicken I sometimes have it alone, or on romaine lettuce (Good for the " O " Type, and also good for an alkaline diet), or with a half-cup or so of crumbled well-cooked ground turkey. This makes an easy, quick meal. I like the amounts of fiber in this salad, and also the nutrients. And I believe that the fact that these veggies are eaten raw makes a difference in how our bodies use them, and react to them. I have had a pretty stubborn and severe case of skin rashes due to candida since January, and have been getting progressively better using Glutamine, Candex (most recently) and a largely raw-vegetable with an apple a day diet. I have started drinking much more water to which I add 1/4tsp sea salt/qt, and have found this to be very helpful. Also, I take digestive enzymes (Papaya) after every meal, and this has proven to be a wonderful help in my digestion - this with the added water is a winner. I have read that when we get older (I am almost 60), our bodies do not produce enough enzymes to properly break down our food. I don't know, but those enzymes have really helped me, and are helping me to eliminate a lot of stuff from my gut quicker. And the high-fiber food helps a LOT. Just some musings on this Thursday evening... Hope you can try the salad.
