Cabbage Lasagna

I tried the Cabbage Lasagna and it was GREAT!!! I'd forgotten how much I

missed casseroles!!! You are really going to like this:

cabbage lasagna:

1 to 1 1/2 lbs. ground beef

1 jar Ragu Traditional Spaghetti Sauce (regular size) about 5 carbs per ½

cup.

1 small head cabbage

cottage cheese or ricotta (a small amount added in dollops when layering. I

2 cups mozzarella cheese

Slice cabbage in lasagna sized slices, boil until tender, and drain. Brown

ground beef, pour off grease, and add Ragu. Put a little sauce in the

bottom of a casserole dish or baking pan, and then layer the rest of the

ingredients as follows: cabbage, cheeses, sauce, then repeat the

layering ending up with sauce on top. Save a little of the mozzarella to

sprinkle on top. Bake at º350 for about 30 -45 min (the longer the better

to absorb the liquid). Let it sit for about 15 min after removing from the

oven before slicing.

I sometimes make this in little individual dishes and then reheat one when I

want something fast. It is probably the highest carb dinner I make so I eat

low or no carb earlier in the day when I plan to have it for dinner. It

makes enough for 1 person for about 4 meals or more. Topped with crumbled

bacon and chopped green onion, it makes a good main dish.

I would cut the " spine " part of the cabbage leaf out next time, but other

than that, this was a FANTASTIC recipe!! Enjoy!!
