Guest guest Posted March 7, 2006 Report Share Posted March 7, 2006 I went and bought the "fixings" for a recipe tonight that Clara from Texas TOPS sent me over a year ago LOL. I wanted to try something different and something healthy of course. I tried Oven Fried Chicken. While it was very messy it came out VERY, VERY good! My friend and I loved it! And I will be making it again....probably tomorrow night because I still have all the ingredients and some chicken left. We had it with carrots, green beans, and corn and I'm glad because I needed more veggies in my diet. Here's the recipe just in case you don't have it. Try it! It's WONDERFUL! ! ! 6 boneless/skinless chicken breasts. (Kind of pricey but so worth it!!!) 1/2 cup buttermilk. (Yuck! Sounds good but tasted NASTY. My friend took a sip FEAR FACTOR style and it wasn't pretty! I have had it before. Ewwwww. I begged my mom to buy it because it sounds so good....hello...butter and milk....she told me I wasn't going to like it but she bought it anyways....she was right...I didn't like it!) 1 tsp hot-red-pepper sauce (I used Tabasco sauce but I don't know if that's the same thing. It was .99 versus 3.49 for something called "Hot Red Pepper Sauce." I also need to read the directions better. I used 1 TABLESPOON instead of 1 TEASPOON. Whoops! Still came out great!) 1/2 cup flour. (Had to ask some lady shopper what the difference between BLEACHED and UNBLEACHED was. Forgot my phone or I would have called mommy. She told me unbleached was better. I have never bought flour before! LOL) 1 tsp paprika. (Easy to find in the spices but I have no idea what it is!) 1/2 tsp salt 1/2 tsp pepper 1/4 tsp garlic powder 1 cup crushed cornflakes (do they come crushed or do you just buy a box of CORN FLAKES and crush them? I just crushed them! LOL!) Heat oven to 400 degrees (don't prepare the dish on top of the stove while it's on because everything starts to get very hot! LOL! Now where's my pot holder?) Coat baking sheet with Pam Spray. (Well... used TARGET spray because it was cheaper!) In bowl mix buttermilk (ewwww) and hot sauce (don't taste...spicy) - add chicken to coat. On plate mix flour, paprika, salt, pepper, and garlic powder. (don't sneeze!) Take chicken from buttermilk (FEAR FACTOR) mixture, coat with flour mixture and place on waxed paper. (No wax paper here. I skipped this step! LOL!) Dip pieces back into buttermilk (gag), roll in crumbs (crush more...that wasn't enough) and place on prepared baking sheet (that is very hot because it was cooking on top of the stove the whole time...pot holder needed). Coat chicken with Pam Spray (didn't see this step until now so I skipped it) and bake 20 minutes, turn over and bake until crumbs are golden and chicken is cooked through another 15 - 20 minutes. (I cooked for 25 minutes on this step just to make sure.) Makes 6 servings (um.....whatever! I think it was like three servings!) each serving: 193 calories, 12 g. protein, 18 g. carb, 3 g. fat, 57 mg cholesterol (thank you spell checker) 374 mg sodium. Serve with sides and plenty of water....which I did!This was VERY messy but very quick and VERY delicious! ! ! I was shocked. Try it....you'll love it! !Okay...just had to share. Have a great night. Guest guest Posted March 8, 2006 Report Share Posted March 8, 2006 , I make the same thing, only a little different. I don't use the Tobasco and skip the extra step of dipping twice. I mix up the flour, spices and cornflakes and just dip in buttermilk first, then the other things. I tastes great! I love it. I also make it using chicken breast with the bone in. I actually prefer it that way. Somehow it tastes just a little bit different. I have taught my 10 year old granddaughter how to make it and she helped my cooking-challenged husband make it one TOPS night! Now that was an accomplishment! There really are a lot of low-calorie, tasty recipes in the world if we'd all just try one new one every once in a while we might be surprised. I like the Jo Lund cookbooks. They are fast, easy and tasty. She always lists the exchanges and nutritional analysis at the end of each recipe. I'm glad you liked Clara's recipe. I actually used them to flip the chicken over in the oven AND to serve them on the plates. I'm not THAT dumb in the kitchen! LOL! I made the Oven Fried Chicken again on Wednesday and it came out even better. Might make it again this week. I don't want that nasty buttermilk to go to waste! Ugh! ! ! The part I didn't like is how messy it was on my hands and etc. Next time I will use the tongs for sure! I used them to flip it in the oven and when I served it but it never crossed my mind to use it to prepare the meal. Thanks for the info.! Oh , what a great start to my day, I think that you just may be the next food network star. My husband loves buttermilk, how can anyone drink stuff that looks and tastes like milk that has been left out all day in the sun. It is good in recipes though and it was a surprise to me how low in fat and calories it is. I tend to buy the store brand on a lot of things too, much cheaper. If you are going to make this a lot I'd suggest you get some tongs, then you won't have to stick your hands in all that goop. I keep an eye out for when the chicken breasts go on sale and then get a whole bunch of them, then when I get home separate them and put them two in a freezer bag, that way I always have some ready to go. Sometimes I'll chop and season some and cook it in a pan sprayed with cooking spray and then stick that in the freezer to, there are lots of recipes that call for cooked chicken.
