The best rule of thumb is " Let your meter be your guide. " I made a homemade 3 cheese pizza with a corn Tortilla, Mozzarella, Parmesan and artifical chatter with a catsup. It spiked to 350, needless to say I stopped making this pizza. Now there are other kinds of flour that you could use in place of bleached and whole wheat flour. Others here could give you some advice on them. I can eat the same thing two days in a row and get different numbers. With all this talk about pizza, we may go for pizza today, then again, we may go to another restaurant where I'll have the taco salad. Pizza is a little different from what I hear in that it takes longer to spike due to the cheese as the fat will make the rest of the carbs absorb slower. Just curious if you checked at 2 or 3 hours.
