just FYI, read labels on flavored vinegars very carefully. There are

a bunch out there that don't say that they are malt vinegar in the

name of the vinegar.

Yes! Tarragon Vinegar usually has malt vinegar in it, I'm sure there are others.

I make a really good salad dressing with orange juice and balsamic

vinegar. I make an orange juice reduction and then add garlic and

balsamic to taste. it is so good.

I always take salad dressing in a container with me to restaurants.

They don't mind and I don't get sick.

If I absolutely must eat out, a salad is pretty much all I can risk.

I take my own dressing, too. If I forget, I ask for pepper, salt,

and fresh lemon wedges. Most halfway decent places have fresh lemon

for iced tea or fish. I can make a kickin' dressing with those

lemons, some cracked red pepper, and some black pepper.

One place I visited had safe-for-me salsa and sour cream. I made a

pretty good taco salad out of their side salad. ;)

I simmer the juice until it reduces, then add some fresh crushed

garlic and balsamic vinegar to taste

I like reducing balsamic vinegar. I just put it in a pot, add some

slivers of garlic (fairly large pieces) and a handful of raisins,

then let it boil away until it gets thick and syrupy. It's amazing

drizzled over fresh tomatoes and roasted peppers.

that sounds wonderful. I know what I am going to have on my lunchtime

salad. yummy.

I've just ordered some flavored vinegars that sound wonderful. I

can't wait for them to arrive so that I can taste them. the blood

orange one sounds really good, but then so does the anjou pear one

and the riesling one.
