2 weeks of being gluten free

Hey Cheyenne, you sound just like me! I feel confused, hopeless and frankly.. pissed off that I hear one thing from one place and another thing from another place both totally conflicting. I went to my Mcs and asked if they had a dedicated fryer and the girl looked at me like I was speaking Chinese. She told me no. Old Country Buffet that we use to eat at several times a month basically told me I was screwed and not to bother coming back. Somewhat nicer though.

As far as your cupboards, I have to do that too. My plan is to get green and red stickers, like for rummage sales and put them on the stuff Cassidy can and can't have. Being 5 I think she'll get that pretty good.

And as for grandparents, I had a huge fight with my father in law this weekend. He said "I'd pay ten thousand dollars to make my legs feel better" he can barely walk from muscle problems that no one can figure out what's wrong. I said Bucky, what if it was as simple as a blood test and a change of diet? He said "I take tons of pills and they help me". (and he does take TONS of pills at every meal, all self diagnosed out of vitamin books, DONT GET ME STARTED, GRR) Anyway.. I said Bucky.. you could save ALL the $$ you spend on those stupid pills AND feel 100% better if you'd just go get a blood test. Someone passed this on to Cassidy and it wasn't my side of the family! He refuses. Said I'm being over dramatic, she'll outgrow it.. blah blah blah. It was a LONG frustrating weekend to say the least.

Hope we both find some peace with this soon!

My youngest son and I are in week 2 of being GF. Admittedly, yesterday I was feeling a little bit confused, hopeless, and even threw myself a pity party. Then a lightbulb went on....I went through our cupboards and separated everything GF and assigned all of the products to their own cupboard section. I saved the gluten products on one shelf of one cupboard so I can either give them to my mom or to the food bank. My mom NEEDS to go GF, but I can't convince her....despite the fact that her mother was diagnosed with CD. ugh. After eating tacos (which I think I may not be able to eat corn or soy...according to the bloated feeling I had and the foggy headedness) I made a shopping list and spent 3 hours shopping last night; making sure I didn't buy anything that didn't specifically say GF*. (I'll get back to that last sentence later). When I came home and put the groceries away, I sat down and wrote out a menu for one week. I feel like Queen of the World now! :-) It's really not a big change (maybe financially, but we'll have to deal with it). I'm treating GF life the same way I treated smoking....remove the toxin completely from my home. *GF labeling question. At Walmart they have mustard, ketchup, and steak sauce labeled as GF, but the ingredients include vinegar and distilled vinegar. Is this accurate? Can I trust these labels? :-) Cheyenne

Yes, Distilled Vinegar is fine. So far I think the only vinegars that are not fine are Malt Vinegar and Apple Cider FLAVORED Vinegar (but apple cider vinegar is fine)

If you've been doing this for two weeks only, I can assure you that it will quickly become much easier. I swear. If you can't eat the corn tortilla's, try making some flour ones. It's REALLY easy, and they taste and "act" just like normal flour ones. Here's the recipe, from a woman in the Delphi Forums Celiac group:

This recipe is from, I think, the Texas support group and makes wonderful, pliable, floury tortillas. Belive me--it makes absolutely fantastic tortillas If you dust them with rice four when you roll them, you'll also get that floury texture that the original kind has. They hold up to juicy fajitas. My whole family eats them and enjoys them, even though I'm the only celiac.Now, one needs to be adept to make them round, which I certainly am not. Mine are pretty funky shaped, but who cares as long as they taste great?1/4 cup each cornstarch, tapioca flour, potato starch, white rice flour and brown rice flour 1 tsp salt 1 1/2 tsp xanthan gum 1 generous tsp baking powder 1 1/2 tablespoon oil 1/2 cup water, more if needed Mix dry ingredients and add water. Let rest 10 minutes. Divide into balls, roll into tortillas and cook on a hot skillet.

Cheyenne, Thank God, we have two pantries in our kitchen. I have my Gluten Free snacks, flours, pizza pie crust mix, breakfast bars, etc.... in it. Mainly due to my husband's kids have a tendency of eating even my stuff, when they don't have the wheat/gluten problems and can eat anything. I got fed up and decided, I'm not going to be fighting over this daily, it's not good for me, due to it'll get me sicker, so I decided, fine, I'll put my foods, flours, etc... in the other one, they don't bother anything in there, Thank God!!! His kids are spoiled, and they have no respect for other people, and I just basically stay to myself when they come around. Most of the time I have no problem with them, but when I say something about they need to please stay out of my foods, due to they are the only things I'm able to eat, Daddy will say, he can buy more. That's not the point, the point is, they need to respect other people, and understand the food restrictions, which they don't have, but I do. Sounds like that's what you're running into with your father in-law. What I'd do is bring foods your child can eat with you, this way you know she is getting foods that is safe for her. We don't out grow this wheat/gluten problem, it's with us for life. I wish I knew what side of the family I get my problem from as well, but don't dare bring it up to my father, he'll just be in denial like your father in-law is. Mom I don't think would have a problem with it, she and I are close and best friends, although Dad says things saying that's what she's saying, and she hasn't even thought it. Men can be so bull headed, and I don't mean to step on any body, not saying all men, but most men. The men that are dealing with it, like we are, or our child is, probably are more understanding, than the ones who don't have this problem. Can you freeze these flour tortillas? Has anyone bought some pre-

made that taste like the reg. flour ones? (there are few thinsg in

life that I hate & cooking is one of them) LOL
