Guest guest Posted September 6, 2006 Report Share Posted September 6, 2006 I make a 'cottage cheese whip " by putting 1/2 cup cottage cheese, 1/4 cup ricotta cheese and 1-2 Tablespoons cream cheese in a mini chopper and blending it with 1-2 packets of Splenda. It's excellent on crackers, toast, pretzels, or even on a spoon straight from the bowl. I have also left out the cream cheese and just blended cottage and ricotta (in the ratios above or equal amounts), with great results. And just yesterday, I mixed in chopped strawberries for some variety. Small curd cottage cheese 1 pkg of jello (use the powder don't make it) 1 large can of crushed pineapple 1 container of cool whip She stirred it all together and let it sit in the fridge over night. We loved it!! To make this " healthy " I would think sugar free jello and cool whip. I don't know if you can get crushed pineapple without the added sugars or if even without the added sugars if the natural sugar in the fruit would be enough to make you dump or not but I thought I would send the recipe along anyway. So to get her to eat some I put a drippy trickle of French salad dressing on top. I told her it was cherry (red orange in color) and let her eat it on crackers. I am not happy about this hahaha, Knudsons cottage cheese is the best to me. I have a harder time taking it in now. I eat it with tomatoes and cucumbers with a little salt and on the side I have some tomatoe juice... really helps it go down nicely.
