I have a 1975 edition of The Joy of Cooking and I can't find any reference to Gluten Free, just one recipe for Gluten Flour Bread, which is weird, I thought all white bread flour had gluten in it?

All white bread flour does have gluten in it. However, there are

recipes out there that call for high protein flour(aka " extra

gluten " ). It makes doughy, more airy breads.

You can even buy " vital wheat gluten " (just gluten, no flour) at the

grocery store. I've pointed it out to my husband int the past and

called it " box 'o'death " . (not that it would kill me immediately, but

i bet i would wish i was dead if i ate any! ha!)

All white bread flour does have gluten in it. However, there are

recipes out there that call for high protein flour(aka " extra

You can even buy " vital wheat gluten " (just gluten, no flour) at the

grocery store. I've pointed it out to my husband int the past and

called it " box 'o'death " . (not that it would kill me immediately, but

I feel horrible every time I think about it, but years ago before my 8 year

old was diagnosed, I used to bake a lot and I always added this vital wheat

gluten to our breads!!! I feel so bad... she always loved all the baked

wheat stuff.... survived on it!! If only I'd known.

I feel horrible every time I think about it, but years ago before my 8 year

old was diagnosed, I used to bake a lot and I always added this vital wheat

gluten to our breads!!! I feel so bad... she always loved all the baked

wheat stuff.... survived on it!! If only I'd known.

I have a friend who feels horrible that she gave her daughter chicken

NOODLE soup and saltine crackers and plain toast... and all those

other " supposed to get you WELL " kinds of foods when her daughter was

at her sickest, right before diagnosis.

I told her to only think of it as the hug-via-food and

healing-via-food it was meant to be.

There's no way of knowing, before diagnosis, that the food is the culprit.

And then when I got my colonoscopy and endoscopy I LAUGHED at the

irony! Here I am in the recovery room after being tested for celiac...

and what do they give me? Gluten-infested Lorna Doone cookies! Sure,

my tongue was happy about that... but the rest of me? No way!

My point is this: Even the doc, moments after testing you for celiac,

will hand you gluten.

So, LET THAT GUILT GO. It does no good to think about it and feel

badly. Think about it as a failed experiment, the hug it was meant to

be. Don't think of it as accidental poisoning.
