Mock McNuggets

Hi everyone,

Just wanted to share that I made the Mock McNuggets from the recipe

file tonight. I followed Melonie's advice and used ground chicken

(1lb.. perdue bought at A & P) and added the egg to the chicken instead

of dipping it. I baked them at 325 (wasn't sure about that.. didn't

see that on the recipe) for about 20 minutes and turned them 1/2 way

through. AWESOME!! We told our 4 1/2 year old daughter who doesn't

have cd that we " borrowed " the recipe from himself. She is a

little reluctant to try all the new and exciting gf foods coming out

of our kitchen. Anyway.. they loved them. I also made a few chicken

patties and dh and I enjoyed those. Thank you so much!!!! We are so

happy about this.. and appreciated the extra advice about freezing

them etc.

Just a quick question... do you most of you have a second fridge with

a good size freezer in it? We have a side by side and have come to

realize that we need extra freezer room for our trips to out of the

way food stores, online ordering etc.

Also.. dh and I did the ttg, igg, iga celiac sprue bloodwork today.

We also did the gene testing too. Our dh (4 1/2) ttg came back

negative but they didn't do the gene testing. She has no symptoms

whatsoever right now. I don't think I am symptomatic other than

usual tiredness probably from having 3 young children and I do have

joint pain in the morning. DH doesn't complain of anything so not

sure. The testing is going to Quest. Our cd son's bloodwork was

initially done at quest and during biopsy they retested through

prometheus. Both results were similar. And biopsy confirmed. Will

keep everyone posted... sorry so long! just so excited about the

mcnuggets!

Glad to hear about your success with my nugget recipe. :)

I bake them at 350 degrees. (I think that part is missing from the

recipe... will have to get that added).

I like your comment on borrowing the recipe from Mc in

order to get your little one to try them. Whatever works, right?

The key to that recipe is the GROUND chicken, and using the potato

chips. All the other parts can be improvised as needed. (you can

also try it with Sour Cream & Onion Chips, or BBQ chips if you was

some nuggets with ZING!)

which I happened to have on hand. I'm thinking maybe the consistancy will be

different from chicken? I had 1.36 lbs. of ground turkey and used one egg. Was

that right? Or should I have used two? They seemed a little stiff or hard.

Finally, I crushed the chips, but they didn't seem to cover really well, so I'm

thinking maybe I should have ground them in the blender or food processor to

make them finer? What I had were very small chip pieces stuck to mini turky

burgers. As I said, they were good, but not quite what I was hoping for. I'd

really appreciate advice on this so I can make them again.

I had this same experience the first time

I tried the recipe. We did Not like the turkey! I use it for lots

of things but it was nothing like a chicken nugget! My chips were too big

as well.

So, the next time I found ground chicken

and used the blender to crush the chips very finely and the kids really liked

them. Our current favorite version is just to take chicken tenders and

cut them into chunks, then dip in a combo of the lay’s and whatever

crushed bits of Tostitos, or other chips we have. They are less like

Mcdonald’s, but I like the chunks of chicken.

This recipe was a lifesaver for me –

my kids had really been missing chicken nuggets. I keep these on hand in

the freezer at all times, and my college son also keeps them stocked in his

apartment.

Laurie,

I only use ground chicken. Personally, I wouldn't use ground turkey

for this nugget recipe at all. (although I have used ground turkey

for other things in the past). Ground chicken is definitely

the " golden " ingredient for my nuggets. Also, it is a good idea to

completely crush the potato chips (in a blender, food processor, or

put them in a big ziploc... and save your boxtops for education

label off the baggies for Esther... and then roll them with a

rolling pin. All of the potato chip pieces should be smaller than

an eraser on a pencil... Otherwise, you will have these big potato

chip " flakes " hanging off the nuggets. I think you should try

again. :)

You have to use ground chicken, ground turkey does NOT work....I dip the nuggets in the egg, and I do a mixture of egg and mayo....I crush my chips in the food processor...

You have to use ground chicken, ground turkey does NOT work....I dip the nuggets in the egg, and I do a mixture of egg and mayo....I crush my chips in the food processor...

I tried this tonight, and they were good, but not quite what I expected. I think I may have not done it quite right. First of all, I used ground turkey, which I happened to have on hand. I'm thinking maybe the consistancy will be different from chicken? I had 1.36 lbs. of ground turkey and used one egg. Was that right? Or should I have used two? They seemed a little stiff or hard. Finally, I crushed the chips, but they didn't seem to cover really well, so I'm thinking maybe I should have ground them in the blender or food processor to make them finer? What I had were very small chip pieces stuck to mini turky burgers. As I said, they were good, but not quite what I was hoping for.
