Sounds great...and Food Lion has 5# bag of potatos buy one get one!! I know what I'm making this weekend when it snows-AGAIN!! Just added all the ingredients to my shopping list!!!

Loaded Potato Soup Crockpot Recipe

I found this recipe in a recent edition of Southern Living Magazine. I just made it for the first time today, and it is yummy! Just thought I'd pass it along.

Loaded Potato Soup (Crockpot Recipe)

Makes 8 servings

4 pounds new potatoes, peeled and cut into 1/4-inch-thick slices

1 small onion, chopped

2 (14 oz) cans chicken broth

2 teaspoons salt

1/2 teaspoon pepper

1 pint half-and-half

Toppings: shredded Cheddar cheese, crumbled bacon, green onion slices

Layer sliced potatoes in a lightly greased 6-quart slow cooker; top with chopped onion.

Stir together chicken broth, salt, & pepper; pour over potatoes and onion. (Broth will not completely cover potatoes and onion.) Cover and cook on HIGH 3 to 5 hours or until potatoes are tender. Mash mixture with a potato masher; stir in half-and-half. Cover and cook on HIGH 20 more minutes or until mixture is thoroughly heated. Ladle into bowls, and serve with desired toppings.

Good evening everyone! First Thank you !!! Wonderful recipe!!! Very easy for busy schedules. But now the family wants this soup in bread bowls!!!(ahhhhh) So if anyone has idea for that please pass on!! Thanks again ~ we are cold here in Omaha and was a great dinner! LOL...that is so funny seeing you post the recipe again...about 15 mins. ago I went searching through the files for it...so I can make it tomorrow...if only I had waited a bit!! Sounds like a hit... so I can't wait to see how it turns out.

I used to make a seafood soup (Haven't tried to adapt it yet) and instead of serving it in bread bread bowls I put a half of a bagel in the bowl first, tasted great and pretty close to having bread... if you have any gluten free bagels maybe this would work.

I made this for my lunch today and it's awesome!!!!! Then my kids came home and tasted it and wanted it for afterschool snack. My oldest daughter didn't have time to eat before heading out to work and wants me to make another batch for her to have later this evening. It's a hit! Thanks so much for sharing a delicious, EASY recipe!!!

I tried to make it this weekend but it didn't really work out for me. I have a crockpot full of extra fattening mashed potatoes. I'm not going to complain because I do love mashed potatoes but I'm really wondering what I did wrong. I assume it was just too many potatoes (I had a 10 pound bag and just guessed on the amount). The recipe says the broth doesn't cover the potatoes, exactly how not-covered are they? Are the potatoes supposed to be just barely over the broth or more than that? The broth was just under the top layer, almost covering it for me. I didn't mash them hardly at all, as I like big chunks of potatoes. I also added a few potato flakes to thicken the broth. I used 4 cups of chicken broth made with bullion, it was just slightly under the amount of potatoes and onions I had in the crock pot, I mashed mine pretty good and it looked like kind of soupy mashed potatoes and then I added the half and half and it made a cream of potato soup with lots of flavor, not chunks of potato but nice little lumps. When I had it in the bowl I topped with grated cheddar cheese, a spoonful of sour cream, and some chopped green onion. I probably had a little less than 4 lbs.
