Darlene hi.. this is one that you will have to play with... cause i really don't have any set recipe.. but its the best meatloaf i have ever made... and the test of course.. is that all of my NON southbeach friends devour this one up and all ask for the recipe! i usually use 1 pound of ground turkey... super lean one onion chopped half green pepper choppped fresh garlic sliced super thin you can add mushrooms (i don't) 1 cup of ground flax seed (this is the secret ingredient) 1 egg slightly beaten (can use equivilent of egg beaters) 1/2 C of fat free half and half worcestershire sauce to taste dry mustard to taste salt, pepper, italian seasoning to taste sugar free ketchup for the top grated low fat parmesan cheese for the top preheat oven to 350 degrees ok.. sautee the onions garlic and green pepper in olive oil till its they are softened. combine the ground meat with the ground flax, then add sauteed veggies.. beaten egg, f/f/ half and half..and form into meatloaf... place in a pan to bake... bake at 350 for 50 minutes lightly covered with aluminum... the remainder of its baking time... remove.. put the sugar free ketchup on top with some grated parmesan.. and bake uncovered till done... depends on ovens..the amount of baking time needed. this is the JUCIEST meatloaf i have EVER MADE.. i THINK the flax seed acts as a binder as well as providing the juice. hope this helps ENJOY! smiles from jodi in miami a beautiful woman is the hell of the soul, the purgatory of the purse and the paradise of the eye.
