THey aren't super low, but are not high either... 1 medium artichoke is 13.453 grams of carb subtract the fiber 6.912 6.541 total grams of carb per one medium artichoke raw, depending on what you serve it with, etc ads to the amt of carb. Guest guest Posted December 10, 2001 Report Share Posted December 10, 2001 Hi , Before you cook them, you've got to cut off the tough stem bottom and pull off any tough, dried out leaves at the bottom. Now, for the thorns.....most people cut about an inch off the top with a knife and then, using scissors, trim off the thorn from each leave. I usually poach or steam them with lemon and garlic in the water. Some people (like my husband) go for the heart right away by pulling off all the leaves. The " choke " is a purplish, fibrous cover over the heart. This needs to be removed by carefully sliding a knife under it, separating it from the heart. Others (like me) save the heart for last.
