Crepes

3 large eggs

1 TB oil

1/3 cup protein powder

1/2 cup water

1 tsp. vanilla

Whisk ingredients, spray 6 " pan with Pam, pour 1/4 cup batter in pan

heated to med., and swirl to coat. Cook until top is dry. Remove and

cool.

Lunch: You could make double this recipe and use leftovers as wraps

for diced meat, grated cheese and shredded lettuce. Rollup with your

choice of yummies inside, and heat under grill until cheese melts.

Yummy! (*They actually have a restaurant here in GA that does this ..

costs $5 per rollup, but they are wonderful!*)

Dessert: Triple the recipe and fill with whipped cream, flavored with

strawberry or other SF syrup of your choice. Add nuts and / or

berries. Roll up and enjoy!

Pancakes

3 eggs

1/3 cup protein powder

1/2 cup water

2 TB Vital Wheat Gluten

1 tsp. vanilla

1 TB oil

10 drops liquid sodium saccharine or stevia to taste

1 tsp. baking powder

For really fluffy pancakes, beat whites till stiff, mix other

ingredients separately, then fold in. For lazy days, just mix. Cook

on med. heat in pan sprayed with Pam.

Creme Lorraine

6 slices bacon, fried until crisp and crumbled

1 and 1/2 cups grated Swiss Cheese

1 and 1/2 cups grated Parmesan Cheese

2 cups heavy cream

2 eggs, well beaten

1 tsp. salt

1/4 tsp. white pepper

Mix bacon, cheeses, eggs and seasoning. Bake in 1 and 1/2 quart dish

for 35-40 minutes until set. Makes 4 (very high calorie!) servings.

This is probably best saved for once in a while.

Idea: Make little 'quiches' in muffin pans and freeze for easy

breakfast treats you can zap and run with.

Eggs en Brochette

1 egg

1/2 slice bacon, fried crisp and crumbled

1/2 slice (thin) Swiss cheese

2 Tbs.. heavy cream, adjust to taste salt and pepper to taste

Put bacon in bottom of single serving ramekin. Layer cheese on top.

Add a spoonful of cream and break egg on top. Add another spoonful of

cream. Bake at 350 F. about 6 minutes, or until just set. Makes one

serving.

Lately I've been eating one fried egg (over light) on a piece of buttered toast. For some reason I've felt a need for protein so that's been my choice this week. I used to eat oatmeal with a spoonful of wheat germ and a tablespoon of peanut butter. I ate that for months!

I started fixing instant pudding for

breakfast, sometimes vanilla and sometimes chocolate. It really hits the spot

and my kids love it.

I eat almost the same thing every day... eggs over easy, whole grain toast w/butter and turkey bacon... some days I switch out the toast for some tortillas and cheese and have a taquito or two... (book lovers who just share in each other's lives... there's no book for

discussion, but there are often fun little survey questions, or just random

questions to keep the group going... it's a busy group.... Some questions that

go out weekly (for example) are: " Tell us what you're currently reading " / " Seen

a good movie lately? Tell us about it! " / " What did you bring home from the

library this week? " / " Do you write reviews? Share a link! " .

I love that group. Been a member there for years. :o)

LOL... Brings back memories. In 2003, I got my tonsils taken out (I was 25 yrs old .... and I do NOT recommend you do this at such a late age!!!!).... and all I could manage to get down for about 3 weeks was vanilla pudding! :-? I lost 20 lbs in those 3 weeks! LOL... But, that was NOT a recommended way to go! The pain was massively intense, and I don't wish it on anyone! :-O

My usual breakfast is one of a few things...

* bowl of cereal (honey-nut Cheerios, Frosted Flakes, Mini Wheats, or Oatmeal Crunch with Raisins)

* two pieces of whole wheat toast with peanut butter & sugar

* two granola bars

or...

* two oatmeal-to-go bars
