Potatoes do not have gluten.Neither does corn but a lot of peo ple I hear have problems with corn also. Wheat bread you want to avoid at all costs on a gluten free diet. (Likewise, being hypo, you cannot use the soy.) As a diabetic, I know that potatoes are a very high glycemic item, more so than many desserts. They send my blood glucose up very easily. Re: Gluten FRee Recipes Potatoes are a nightshade plant, and corn is a grain, not a veggie. Many experts are saying that us hypos maybe shouldn't consume nightshades, and celiacs should not consume any grains except for rice, if you can tolerate that. Anyway, I must tell you that I'm losing weight like crazy AND I have lost my appetite and cravings! I never thought I would see the day that I could turn down mexican food!
