Lotus Seeds

Lotus seeds are one of

the foods that gets mentioned in Macrobiotics without a whole lot of

explanation or variation.

I was just playing around in my kitchen this afternoon and came up with

this:

Lotus Seed Salad

Lotus seeds are touted to give us strength and vitality but the

onlyrecipes I could ever find for them just added them

to soups or grain. Here is the result of a very happy experiment with

this fun and different food. They are low in cost

and found in Chinese markets or some health food markets or online.

1 cup Lotus seeds

Approximately 2 C. water

1 inch strip of Kombu sea vegetable

2-3 T. organic white miso paste

2 T. mirin

1 tsp. minced parsley

1 tsp. chopped chives or dill (optional)

Wildwood or 's plain soy yogurt to taste

Pepper (optional)

Soaking the lotus seeds will cut down on the cooking time. Place

seeds, water and kombu in a pot and bring to a boil.

Reduce the heat and simmer approximately 45 minutes with a lid on the

pot. Keep an eye on the seeds to make sure

there is still water remaining in the pot. When the seeds are soft

enough to eat, remove the lid and simmer

any remaining liquid away. Dissolve the miso paste in the mirin and

add to the hot seeds.

Add parley and any other herbs or spices. Stir in plain soy yogurt to

taste. Serve on a bed of lettuce or wilted greens

or in a sandwich.

Variation: Add curry or turmeric or both for a different flavor. Try

other types of miso paste for another variety.
