1st batch of Kombucha

this is my first full day of brew what I see in the glass with a light

shining through is the surrounding tea and what looks like portugees

man of war

is this natural and if so is this the formation of the mushroom and

the firmantation process??

Yes, this is natural and normal. What you are seeing is the solid culture

(the SCOBY) plus the yeasts " flowering " into those stringy bits.

SOunds like you have quite an active culture in terms of yeast, since this

is quite early on. WOuld strongly suggest when you harvest this batch that

you remove the starter for the next batch from the top of the vessel,

before you even move the SCOBY. That starter will be more

bacteria-dominated. You very much want to avoid a yeast overgrowth in your

brew. So if you consistently take your starter from the top of the brew,

you'll get a nice balance that doesn't overtip toward yeast.

I'm told that in Germany, which has a long tradition of brewing KT,

they don't let the children see the brewing itself until they are

well-ensconced in their relationship with kombucha. Because the brew can

be rather alien looking to us humans.
