10. Guenther - The Genuine Kombucha Culture

What Guenther did was to collect a lot of data from many

different sources on the elixir referred to as kombucha. He

found that there was a difference in many of the ferments.

This was confusing to most kombucha brewers - then entered

Roussin. Upon testing some 1,000 kombucha from all

over, he was able to identify - not the differences - but

what all shared in common. He reduced it to the lowest

common denominator. Within that very narrow definition not

only were the Kombucha's that he tested related but the

definition also matched all the research Guenther and

others collected. Where Guenther was identifying

kombucha as " transportation " Roussin clarified kombucha as

" automobile " . Now there are many different automobiles but

kombucha ain't no horse and buggy.
