Guest guest Posted August 1, 2006 Report Share Posted August 1, 2006 Audrey, kombucha can grow in clear glass or plastic or in the dark. Yet, I acknowledge that light does effect the fermentation. To what level that creates an undesirable affect has not been critically determined as far as I know. This would be an important distinction as far as if the ferment was to be drunk (and therefore different consideration) or to be used to propagate the ferment (and different consideration here) The industry standard for ferments is brown bottles and follow the other ideas expressed earlier. Some commercial kombucha brewers follow those guidelines very carefully (Pronatura and Kombucha 2000, High Country in brown glass but a short neck) others don't (Kombucha Wonder Tea is in short wide opening plastic, GT and Kombucha Botanica in wide opening clear glass) . Kombucha as a ferment represents a balance of desired bacteria and yeasts. But there are/or may be present a variety of yeasts and bacteria either entered from the air (wild) or from other sources that go from a dormant to a dominant state and adversely affect the ferment. for most home-brewers none of this matters - as long as the taste is what one is after. live free and healthy Ed Kasper L.Ac. I have two types of swingtop bottles, one has a long neck and a square body, and fits in my fridge nicely. The other is from the brew shop groeler? and has a rounded body that fits better in my rack. Do you have a prefference? After my exposion, I am using plastic until I get the hang of this, on a schedule. I think it was the grape kefir that started the chain reaction.
