Thank you MArge and I have always appreciated your insights

over these many years as well.

Just to add a note while MOV will always be below the

surface a floating colony may not always be kombucha. As

noted earlier many biofilms (ginger beer, EM, lactic acid

ferments, chocolate .... ) may produce something similar to

kombucha.

Dear Ed,

You always post such great new info.

I didn't know MOV would always sink. Luckily, I have never

had a scoby sink so far.
